I made healthy, gluten-free brownies with chia seeds on Saturday for Don and L.
Gosh, they were yummy. I could only have a bite because I’m still on my whole-food cleanse.
After I posted pictures of these brownies on Instagram, I had several people ask me about them.
Being gluten-intolerant or having celiac disease is something more and more people have to deal with, and there is a big need for delicious, nutritious gluten-free recipes, so I wanted to share mine with you.
Incorporating more gluten-free products is probably a good idea for all of us since wheat is so highly processed in the U.S. I have started to buy more gluten-free products in the last few years even though L and I don’t have a problem with it. I do have a suspicion that Don does, though.
Gluten-Free Brownies With Chia Seeds & Apple Sauce Recipe
- 1 box of gluten-free brownie mix
- 4 teaspoons of butter
- 2 eggs
- 1 cup of apple sauce, or even better: 1 pouch of organic broccoli-apple baby food
- 5 teaspoons of organic chia seeds
- optional: 5 teaspoons or more of chopped organic almonds or other nuts
The gluten-free brownie mix I used calls for 7 tsp of butter and 2 eggs for the mix. Adjust that to what your mix calls for.
I always think of ways to make our food more nutritious, so I substituted half of the butter with a whole pouch of Plum broccoli apple organic baby food. Yes, broccoli in brownies!
I also added Omega-3 rich organic chia seeds and chopped organic almonds. L doesn’t like nuts as a snack, so adding nuts to these brownies is a great way to get kids to eat healthy nuts (unless they are allergic to them).
I used a 7×11 glass pan and baked the brownies at 350 degrees for about 25 minutes, until the chopstick I stuck into them came out clean.
You would never know that half of the butter was substituted, and the chia seeds give these gluten-free brownies a yummy crunch.
This recipe is so super-easy, I don’t know why anyone would buy store-bought brownies that are full of unhealthy ingredients, like hydrogenated oils.
