Vega One Muffins

I literally just pulled these Vega One muffins out of the oven. I wish you were here to enjoy them with us!

I bought a box of healthy muffin mix on sale at Target for $1.14, and Landon and I made them today.

As always, I couldn’t help myself to make them even healthier.

This is probably the easiest way to make any muffins or cakes or pancakes much healthier:

I substituted pear and spinach baby food for half of the oil the recipe called for, added chia seeds, and here is the main thing –added VEGA one powder.

Just in case you’ve never heard about it, Vega One is an all-in-one shake powder I use a lot because it adds so much nutrition to recipes.

Great idea using the Vega! It’s pretty much the only protein powder that i can actually ingest (sensitivities to ingredients in other brands)…so i LOVE this idea!

It’s great, right? I don’t use it for a whole shake — I just add it to recipes. Simple and extra nutrients.

Hi Dagmar, what an interesting ingredient to use the baby food as part of your recipe, I would not have ever thought of that and of course the protein powder, happy and healthy muffins, they look great!!!
