I think there is a theme here: I’m not a great cook, but I can whip up healthy dishes that only require stirring together and heating up a few pre-packaged ingredients.
My vegetarian quinoa tofu dish I made with Trader Joe’s products was really popular, and here is another really fast one:
Organic Broccoli Slaw With Rice and Vegetarian Chili
All you need is:
- a teaspoon of organic coconut oil
- a can of organic vegetarian chili
- and a bag of broccoli slaw
- optional: add brown or white rice, or leftover rice or pasta

Directions:
- Heat up the coconut oil in a pan and add the broccoli slaw for a few minutes to cook it
- Add the chili. The Trader Joe’s vegetarian chili has a little heat to it, so I didn’t add any salt or pepper
- I had leftover rice, so I added a little of that
That’s it! It took 5 minutes to make this yummy and healthy vegetarian dish — just how this cook likes it :)

I made this by accident today and was really good, I added pico, and some cashew cheese to mine. Thought I would see if it was a thing, and here you beat me to the punch…It is good and healthy. Will make it again :)
